Cranberry Apple Quinoa Salad

Salad:

  • 1 cup uncooked quinoa, (I also used farro, and it worked great!)

  • ½ cup diced celery

  • 2 green onions, sliced

  • 1 cup diced apples

  • 1/3 cup toasted pecans, chopped

  • 1/3 cup dried cranberries

Dressing:

  • 2 T apple cider vinegar

  • 1 T honey or maple syrup

  • 1 T olive oil

  • 2 tsp Dijon mustard

  • ¼ tsp granulated garlic

  • Salt and black pepper to taste

  1. Cook the Quinoa according to the package instructions adding a little salt to the water. Once the quinoa is cooked, let it cool to room temperature. (this can be made 1-2 days ahead)

  2. While the quinoa cools, add all of the vinaigrette ingredients to a small bowl or jar with a lid. Whisk or shake until combined.

  3. Once the quinoa has cooled, pour it into a serving bowl along with the remaining salad ingredients. Season with salt and pepper. Pour the vinaigrette over the salad and stir everything together until combined.

  4. Taste for seasoning, you may need to make a little more dressing, then serve or refrigerate until ready to serve.

Homemade Sports Drink (makes 32 ounces)

  • 1/4 tsp salt

  • 1/4 cup sugar

  • 1/4 cup hot water

  • 1/4 cup orange juice

  • 2 Tbsp lemon juice

  • 3 1/2 cups cold water

Preparation: In the bottom of a pitcher, dissolve sugar and salt in hot water. Add juice and the remaining water. Chill and szerve.

Turmeric Facial for Glowing Skin

  • 1 tsp turmeric powder

  • 1 tsp organic apple cider vinegar

  • 1 ½ Tbsp honey

  • 1 Tsp plain yogurt or milk

Preparation: Mix in glass container until a paste forms. Apply to clean and dry face with either a brush or your fingers. Make sure to wear either old clothes or wrap an old towel around your neck area. Turmeric does stain.

Relax for 10-15 minutes

Rinse face with warm water and washcloth.

Face may appear to be a bit yellow but this will dissipate in 1-2 hours. Make sure to use your moisturizer after this treatment. Do not use more than twice a week.
